Cooking With Quinoa

Quinoa (pronounced keen-wa) is a gluten free seed that is used like a grain. It is becoming very popular. So maybe you buy some. It looks strange. And what do you do with it? Quinoa should be rinsed prior to use to eliminate the slightly bitter coating.  It comes in natural, red and/or black. Quinoa has a slightly nutty flavor. 

I prefer to sauté it in a small amount of coconut oil and stir it until it starts to turn brown. Immediately pour in twice the amount of water as you have quinoa. When the water comes to a boil, turn the heat to medium low and cover pot with a lid for 15-20 minutes until all the water is absorbed.  I usually shake in some dried herbs such as cilantro. You can use broth instead of water for a fuller taste. Mix the quinoa with your favorite chopped vegetables either raw or sautéed. It can be eaten hot, warm or cold as you prefer. Quinoa is a good source of protein. 

Quinoa can be a side dish, or it can become your meal. For a vegetarian dish add beans or nuts with the vegetables.  Adding  some leftover chicken or fish makes a good meal for those who are not vegetarian. It can be served on a bed of lettuce for a salad type meal. You can totally change it by using italian herbs, or indian spices such as turmeric. As you can see, quinoa is a versatile food worth trying.
